3D Vision Surround setup would require more memory than a single 3D monitor system.
The higher resolution combined with AA filtering could benefit from more memory for sure, but I cannot say if more than 2GB would make a difference at this point or even if 2GB will be enough, this would require some testing to be performed with more recent and more demanding titles to confirm.
A single GTX 690 should be just slightly slower at stock frequencies than two GTX 680s in SLI, but going for a GTX 690 with 4GB per GPU could be a bit problematic - either such a card would be significantly more expensive or there won't be even models with 4GB per GPU or 8GB in total (space is limited on the board due to the 2 GPUs). So going for two GTX 680 with 4GB could be the better thing to do...
